Zucchini Pie

Ingredients

2cups zucchini, unpeeled and sliced
1medium onion, chopped
1cup cheddar cheese, grated
1/3cup olive oil,
1cup Bisquick baking mix,
4 eggs, beaten
1teaspoon salt,
1/2teaspoon pepper,
3 - 4tbsp parsley,

Equipment

  • 9" pie pan

Directions

  1. Mix all ingredients together and pour into greased 9" pie pan.
  2. Bake at 350 degrees for 35-40 minutes. Let cool 15 minutes, and enjoy!
