Pesto Sauce

Toss with warm pasta or add to jarred tomato sauce.

Ingredients

1/2cup Parmesan cheese,
1/4cup olive oil,
2cups basil leaves (fresh!),
1clove garlic (can add more if you dare!),
2tsp. nuts (pine and/or walnuts),
salt and pepper to taste,

Directions

  1. Combine all ingredients in a food processor. Blend.
  2. Toss with warm pasta. (Tortellini is our favorite.) Can also be added to jarred spaghetti sauce to give it an extra "zing!" When serving,I usually put the pesto sauce in a bowl on the table, along with a bowl of spaghetti sauce, and warm pasta and let everyone mix and match their own meal.
  3. Ingredients can be adjusted to taste. May need more olive oil. Garlic is quite potent...don't overdo it until you taste it.
