Turkey-Blueberry Salad

Ingredients

2cups cooked turkey, finely diced
2tbsp onion, chopped
1/4cup celery, chopped
2tbsp dried blueberries,
2tbsp pecans, chopped
1/2tsp dried tarragon,
4tbsp mayonnaise or vegannaise,
salt and pepper, to taste
whole-grain bread,

Equipment

  • Medium Bowl

Directions

  1. In medium bowl, combine turkey, onion, celery, blueberries, pecans and tarragon.
  2. Mix in mayonnaise and add salt and pepper to taste.
  3. Serve as a salad or on whole-grain bread as sandwiches.
  4. If served immediately, the blueberries will add texture, but a milder flavor. If made ahead of time and refridgerated, the blueberries will provide a richer flavor, but less texture.
