Turkey-Blueberry Salad

Ingredients
2
cups cooked turkey, finely diced
2
tbsp onion, chopped
1/4
cup celery, chopped
2
tbsp dried blueberries,
2
tbsp pecans, chopped
1/2
tsp dried tarragon,
4
tbsp mayonnaise or vegannaise,
salt and pepper, to taste
whole-grain bread,

Directions
In medium bowl, combine turkey, onion, celery, blueberries, pecans and tarragon.
Mix in mayonnaise and add salt and pepper to taste.
Serve as a salad or on whole-grain bread as sandwiches.
If served immediately, the blueberries will add texture, but a milder flavor. If made ahead of time and refridgerated, the blueberries will provide a richer flavor, but less texture.
