Braised Fennel

Yields:

Ingredients

2bulbs fennel, sliced into 6 wedges
seeds from two cardamom pods, crushed
1/8tsp ground mace (or hot dry mustard),
salt and pepper, to taste
1.5cups chicken broth,
1/4cup shallots (green onions, leeks, or onions,
3tbsp butter,

Directions

  1. Saute shallots, cardamom and other spices in melted butter. Make sure to use a pan which is oven safe and had a lid.
  2. Add the fennel and turn it to coat in the butter mixture
  3. Add chicken broth, bring to a boil
  4. Place in oven for 30 minutes, basting occaisionally
  5. Return to stovetop and return to a boil, about 15 minutes until thick.
