Macaroni Lasagna

An adaptation of the Joy of Cooking's basic Lasagna recipe. This is much easier to cut than regular lasagna, and less likely to have crusty pasta.

Ingredients

3cups marinara sauce, (possibly more)
3/4pound low fat ricotta cheese,
1/3pound mozzarella cheese, shredded
1/2pound parmesan cheese, shredded
3/4pound macaroni noodles,
2tablespoons olive oil,

Equipment

  • ceramic baking dish, large
  • boiling pot

Directions

  1. Preheat oven to 350 degrees. Add 2 tablespoons of olive oil to salted boiling water. Cook the macaroni noodles in water until al dente, then drain.
  2. Put a thin layer of sauce at the bottom of the pan. Add a layer of noodles and randomly sprinkle with 1/3 of all cheeses. (Be sure to reserve some parmesan cheese for the end) Top with sauce, and repeat 2 more times.
  3. Top with parmesan cheese for browning. Place in oven for 30 minutes and cook until warm and bubbly. Let cool, but eat warm.
