Cabbage and Sausage

This is a nice warm dish on cold winter nights.

Yields:
 4 servings


Ingredients

1 leek, diced
1link smoked beef (or turkey) sausage, diced
1 small head of cabbage,
salt & pepper to taste,

Equipment

  • Large, deep stew pot

Directions

  1. When preparing the ingredients I like to leave everything in large diced pieces. For the sausage- I remove the casing, cut the link down the middle and dice. Vary the sizes to fit your preference.
  2. Heat the pot on medium heat- then add the sausage. Let the sausage brown (if there is no juice at the bottom of the pan, add 1/2 cup of water to avoid burning). Next add the leeks and cabbage.
  3. Cook with lid on for about 20 minutes, or until the cabbage has wilted. Now add pepper and salt to taste. Enjoy!
