Garlic Beef

A great meal to top pasta or rice for a cold winter day.

Yields:
 6 servings


Ingredients

2tbsp olive oil,
4oz smoked bacon,
2.25lb chuck steak, 1 in. cubes
1 leek, diced
1head garlic,
1c red wine,
1/8tsp cloves, ground
1/4tsp marjoram,
1/4tsp thyme,
1/2tsp parsley,
2 bay leaves,
salt & pepper to taste,

Equipment

  • large stock pot
  • sharp chef knife
  • wooden stirring spoon

Directions

  1. Prepare the meat and leeks. Seperate the cloves of garlic & quarter larger pieces.
  2. Heat the oil with medium heat. Add bacon and cook until the fat is released. Increase the heat and add beef and cook for 5 minutes, stirring occationally until browned all over. Remove bacon and beef.
  3. Add the onion and garlic, cook for 6 minutes, stirring occationally. Add the wine and herbs, return the meat, cook for 2 hours. Check occationally to make sure the casserole is not drying out.
