Asian Grilled Cornish Hens

Ingredients

2Cups Orange Juice,
1/2Cup Soy Sauce,
Dijon Mustard,
1/2Cup Honey,
1/4Cup onion, minced
2Tbsp grated ginger,
Kosher Salt,
Black Pepper,
2Tbsp Olive Oil,
1Whole Lemon, zested and juiced
1Whole Orange, zested and juiced
2Cloves Garlic, peeled and chopped
2Whole Cornish hens, split

Equipment

  • Medium Saucepan
  • Mixing Bowl

Directions

  1. Combine orange juice, soy sauce, 1/4 cup mustard, honey, onion and ginger in a saucepan. Salt and pepper to taste.
  2. Bring orange juice mixture to a boil then reduce to a simmer for 1/2 hour.
  3. Combine olive oil, 1 Tbsp mustard, lemon, orange and garlic in mixing bowl. Salt and pepper to taste.
  4. Rub the olive oil mixture all over the hens and marinate them for at least 1 hour.
  5. Roast the hens in a 375 degree F oven for 25 minutes.
  6. Brush the hens with the orange juice mixture.
  7. Grill the hens for 7 minutes while basting with the orange juice mixture. (Can also do this under the broiler if no access to a grill).
  8. Serve with the remaining orange juice mixture on the side.
