Dairy-Free Banana Bread

Banana bread made with soy milk

Ingredients

1/2Cup Kosher Pareve Margarine, (Rec: Smart Balance Light)
3/4Cup Brown Sugar,
1 Egg,
1 1/2Cups Flour,
1Tsp Baking Soda,
3/4Tsp Salt,
1 1/4Cups Over-ripe bananas (about 3), mashed
1/4Cup Soy Milk,
1Tsp Lemon Juice,

Equipment

  • Mixer
  • 9"x5" Loaf Pan
  • Cooling Rack

Directions

  1. Preheat oven to 350 degrees F
  2. Cream margarine and brown sugar.
  3. Beat in egg.
  4. Sift together flour, soda and salt.
  5. Combine bananas, soy milk and lemon juice.
  6. Add the dry ingredients into the butter mixture -- alternating with the bananas. Stir just enough to combine. DO NOT OVER-MIX!
  7. Turn out into an oiled and floured loaf pan.
  8. Bake 50-60 minutes or until done.
  9. Cool in pan for 10 minutes, then turn out onto cooling rack.
