Puna Goat Cheese Appetizer

Puna Goat cheese with Kehole shrimp and lumpia. From Chefs in Paradise.

Ingredients

6 shrimp, pealed and cut in 1/2 inch pieces
olive oil,
salt and pepper,
3cloves garlic, chopped
2/3cup Puna Goat Cheese,
1tbs Plain roasted macadamia nuts, chopped
Fresh Basil, lightly chopped
Fresh black pepper,
lunpia sheets, to service size- one sheet makes four
1 egg,
water,

Equipment

  • Deep saute pan
  • Small mixing bowl
  • tongs

Directions

  1. Clean and chop shrimp into marble sizes. Heat pan and then add a little olive oil to pan. Add shrimp to hot oil and saute. Add salt and pepper to taste. When shrimp is lightly sauteed, add chopped garlic. Immediately remove pan from table.
  2. While the shrimp is cooking, in a bowl add the goat cheese, macadamia nuts and basil. Add the sauteed shrimp as soon as it is ready. Add refesh black pepper and stir until combined.
  3. With a steady and constant action, peal off a lumpia sheet. Cut it in four. Mix egg witha bout two tablespoons of water. Brush the edges of the lumpia with the egg mixture. Add a dollop (about a tbsp) of the filling to the middle of the lumpia (by rolling with two tsps) then roll the lumpia (starting at the corner, fold next two corners in) until it is sealed.
  4. Heat a deep pan, Add 1/8 inch of oil. When the oil is hot fry the lumpia until crisp.
