Reuben Hush Puppies

What a treat! These amazingly flavorful hush puppies are the perfect appetizer or side dish to spice up any meal!

 2 dozen balls


Ingredients

1c corn beef, cooked and diced
1c rye bread crumbs,
1/2c sauerkraut, squeezed to drain, minced
1/2c dill pickle, diced
1/2c whole or 2% milk,
1/4c yellow cornmeal,
1/4c leek, diced
1 egg,
2tbsp sauerkraut juice or dill pickle juice,
2tsp baking powder,
2tsp dry mustard, ground
1/2tsp kosher salt,
1/2tsp sugar,
1/4tsp baking soda,
peanut or vegetable oil, 3 inches deep in stock pot
24 swiss cheese, cubes
thousand island dressing,

Equipment

  • stock pot
  • plate lined with paper towels
  • metal scooper
  • bowl
  • tbsp

Directions

  1. Combine all ingredients (except for oil, cheese and dressing) in a bowl. Cover and chill batter for 15 minutes.
  2. Heat oil to 350 in a stock pot over medium heat.
  3. Stuff a cube of cheese into 1 tbsp batter. Fry in oil in batches until brown, crisp, and cooked through, 3-4 minutes, turning often; drain on paper towels. Serve with dressing for dipping.
