Oven Fries

From the Kitchen of Cooks Illustrated,

Delicious crispy fries with out a pan of oil.

Ingredients

3 Russet potatoes, wedge cut
5tbsp vegetable oil,
salt and pepper,

Equipment

  • baking sheet
  • spatula
  • large plastic bowl

Directions

  1. Heat oven to 475. Place potatoes in large bowl and cover with hot tap water. Soak for 10 minutes.
  2. Coat the baking sheet with 4 tablespoons oil and sprinkle evenly with 3/4 tsp of salt and 1/4 tsp pepper.
  3. Drain potatoes and spread on a triple layer of paper towels. Pat dry. Arrange potatoes in a single layer on the baking sheet bake and cover tightly with foil and bake for 5 minutes.
  4. Remove foil and continue to bake until bottoms of potatoes are spotty golden brown, 15 to 20 minutes. Rotate the baking sheet after 10 minutes.
  5. Loosen potatoes from pan with metal spatula and tongs. Flip each wedge. Continue baking until fries are golden and crisp for 5-15 minutes longer (rotating pan as needed if fries are browning unevenly).
  6. Season with additional salt and pepper to taste and serve.
