Mardi Gras King Cake

A Traditional Mardi-Gras King Cake, more like a bread with icing.

Ingredients

1/2cup warm water, 110 - 115 degrees
2envelopes dry yeast,
1/2cup + tsp sugar,
4cups all-purpose flour,
2tsp salt,
1tsp nutmeg, ground
1tsp lemon zest, grated
1/2cup warm milk,
2 eggs,
1/2cup + 2 tbls butter, softened
1tsp cinnamon, ground

Equipment

  • small bowl
  • mixing bowl
  • cookie sheet for baking

Directions

  1. Pour the warm water in a bowl. Add yeast and 2 tsp sugar. Let rest 3 minutes, stir with whisk, let rest 10 more minutes.
  2. Whisk together sugar, 3 1/2 cups flour, salt, nutmeg and zest in large mixing bowl. Make a well in the flour mixture, add the milk and eggs. Mix with wooden spoon, add 1/2 cup butter slowly, then mix well.
  3. Turn dough out on surface and work. Knead the dough into a ball with remaining 1 cup flour. Wash and coat the mixing bowl with butter. Let dough rise in bowl for 1 1/2 hours.
  4. Knead the dough and sprinkle with cinnamon, shape into a tube and connect the ends. Place the tube on a greased cookie sheet. Let rise for 45 minutes.
  5. Bake at 375 for 30 minutes, cool on wire rack.
  6. Make icing out of confectioner's sugar and lemon juice, color with purple, yellow and green. Enjoy!
