Saag Paneer

This is a great recipe for indian spinach curry, or saag paneer. We have tried many, this one is our favorite so far.

Ingredients

2-3teaspoons Garam Masala, ground
2tablespoons Ghee,
1medium Leek, fine dice
1 Red Dry Chile Pepper, ground
1/2teaspoon Ginger, dried
3teaspoon Garlic, minced
14oz Tomatoes, petit diced from can
1large bunch Spinach, fresh, washed, pulsed in food processor
3oz Greek Yogurt,
1teaspoon Salt,
8oz Paneer,

Equipment

  • Food Processor
  • Saute Pan
  • Spatula
  • Salad Spinner
  • Spice Grinder

Directions

  1. Heat the Ghee on medium high heat in the saute pan. It will smell like movie popcorn and melt like oil. It's awesome.
  2. Saute the leek until soft.
  3. Add the garam masala, garlic, pepper and ginger. Saute for 2-3 minutes.
  4. Add the tomatoes, and saute for 5-10 minutes until the water mostly evaporates.
  5. Add the pulsed spinach from the food processor. Saute for 5 minutes until the juice is out.
  6. Remove from heat. Slowly add the yogurt an oz at a time. Then mix in the salt and paneer last. Cook for 10 minutes, and serve.
