Curry Cauliflower

Indian flavored broiled cauliflower. Great for dipping in sour cream.

Ingredients

1/2tsp yellow mustard seed,
1/2tsp whole cumin seed,
1/2tsp whole corriander,
1/2tsp whole fenugreek,
1/2tsp ground tumeric,
1/4cup canola oil,
1head cauliflower, cut into 12 pieces with center attached
1cup water, boiling

Equipment

  • baking pan
  • cooking rack
  • tongs
  • sauce pan

Directions

  1. Cut the head of cauliflower into 12 pieces- first quarters, then thirds in each quarter. Keep the stem in each piece.
  2. Place the cooling rack inside the baking pan. Turn the broiler on high. Place the cauliflower pieces on the cooling rack. Heat up the oil to 350, take off heat, add all spices (may want to grind together first, may sputter a bit). Cover the pan in tinfoil. Place the pan in the oven.
  3. Add the water in the bottom of the pan. Broil for 6 minutes. Remove tinfoil. Cover the cauliflower in the oil. Sprinkle on 3/4 tsp salt. Broil for 5-10 minutes.
  4. Flip the cauliflower with tongs. Cover the cauliflower in the oil. Sprinkle on 3/4 tsp salt. Broil for 5-10 minutes. Serve with side of sour cream.
