Chkn Artichoke Rigatoni

Ingredients

8ounces Rigatoni Pasta, cooked
2tbsp Olive Oil,
2handfulls Spinach, Diced
2cups Chkn, cooked
1container Artichoke hearts, diced
1tsp salt,
1/2tsp Black pepper,
1/2tsp Garlic powder,
8ounces Cream Cheese (or goat cheese),
1tsp Vegetable broth,
1 lemon, zested

Equipment

  • Pot (for cooking pasta)
  • Skillet (for mixing all)

Directions

  1. Cook the pasta; drain and set aside. Cook the chkn with vegetable broth and set aside.
  2. Heat olive oil over medium heat. Cook spinach, artichokes, chkn, salt, pepper and garlic powder (3-5 minutes) until heated through.
  3. Reduce heat to medium-low, stir in cream cheese (or goat cheese), additional water or broth if needed. Cook until creamy.
  4. Add pasta to pan, stir all together, add lemon zest. Ready to serve.
