Oatmeal-Cookie Chews

 50 cookies


Ingredients

1cup butter or margarine, room temperature,
1cup cup packed brown sugar,
1cup granualted sugar,
2teaspoons vanilla extract,
1/2teaspoon salt,
3 eggs,
2-1/2cups all purpose flour,
2teaspoons baking soda,
2cups rolled oats,
1cup raisins,
1/2cup choppoed walnut,

Directions

  1. In a large bowl, beat together butter or margarine, brown sugar, 1 cup granulated sugar, vanilla and salt until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add flour and baking soda, beating until throughly blended.
  4. Stir in oats, raisins and and walnuts, if desired.
  5. Refrigerate dough 1 to 2 hours for easier handling.
  6. To bake cookies, preheat oven to 350 F (175C).
  7. Shape dough into 1-1/2 inch balls. Roll in 1/3 cup of granulated sugar, coating completely.
  8. Place 3 inches apart on ungreased baking sheets, flatten slightly with bottom of a glass.
