- Thinly slice the pork into strips, about 1/4 inch thick or less. Place in bowl and add 1/2 cup teriyaki sauce, letting sit for 15 minutes.
- Meanwhile, shred the ginger, mince the garlic and julienne the carrots (we used the food processor for the carrots). Add sesame oil to the stir-fry pan and heat to medium-high. Add ginger and garlic until soft and golden brown.
- Add pork and marinade to pan, stirring to evenly coat with spices. If needed, add some more teriyaki sauce to the mix until well coated. Cook until pork nearly done.
- Right near the end of cooking, toss in carrots and cook until soft. Serve on Jasmine rice.
