Choco Lots

Ingredients

6ounces semisweet chocolate,
1tablespoon unsalted butter, cut into pieces
1large egg, room temperature
1/3cup sugar,
1/2teaspoon vanilla extract,
2tablespoons all-purpose flour,
1/8teaspoon baking powder,

Equipment

  • electric mixer

Directions

  1. Chop or break 4 ounces of the chocolate into pieces. Use a paring knife to cut the remaining 2 ounces into 1/4 inch pieces, the size of chocolate chips. Set aside the small pieces
  2. Melt the 4 ounces of chocolate in the microwave or over a double broiler, until a few small pieces remain unmelted. Add the butter and stir to melt completely. Set aside to cool. The mixture with be thick.
  3. In a small bowl, using an electric mixer, beat the egg, sugar, and vinall on medium speed until it thickens, about 1 minute. Stir in the melted chocolate. Sift the flour and baking powder into the bowl and stir to combine. Stir in the small pieces of chocolate. Chill the mixture until firm enough to handle, about 1/2 hour.
  4. Preheat the oven to 350 degrees.
  5. Roll the dough into about twenty 1-inch balls. Place on ungreased baking sheets about 2 inches apart and flatten slightly with your hands. Bake for about 12 minutes, or until the tops are no longer glossy. Let sit for 5 minutes, then transfer to a rack to cool completely.
