Spaghetti Soup

We received this recipe from Dale's, a great spot for soup in Milwaukee. It's great on cold winter days.

Ingredients

1/3pot water,
1/2cup leeks, diced
3lbs hamburger, browned and drained
1can diced tomatoes,
1can Hunts tomato sauce,
1pound fresh mushrooms, sliced
1 green pepper, diced
3tablespoons parsley,
1teaspoon salt,
1/4teaspoon pepper,
1teaspoon oregano,
1teaspoon basil,
1teaspoon garlic salt,
1/2teaspoon celery salt,
1/2cup beef boulion,
1pound angel hair pasta,
parmesan cheese, for topping

Equipment

  • large stock pot

Directions

  1. Brown and drain the ground beef. Add all other ingredients up to beef boulion, and simmer until green peppers are tender.
  2. Add angel hair pasta, broken into small pieces, and cook until noodles are tender. This can simmer for an hour.
  3. Serve with bread or crackers, sprinkle with parmesan cheese.
