Garlic Yogurt Spinach Soup

A light tasty soup which makes a quick and satisfying dinner.

Ingredients

3Tbsp Oil,
1 onion,
2lbs. (approx.) spinach or swiss chard, washed, stemmed and torn
1/2cup white rice, (substituting brown rice doesn't work)
1quart water or veggie broth, (veggie broth makes it creamier)
2cups plain yogurt,
1-2tsp garlic, minced
salt and pepper, to taste

Directions

  1. Saute onion in oil
  2. Add spinach, and cook until it is contimue until limp (about 8 minutes)
  3. Stir in rice, water, salt and pepper. SImmer until rice is ready (about 10-25 minutes)
  4. Remove pot from heat, stir in yogurt and garlic, reheat carefully- don't boil or the yogurt will curdle
