Pepitas Pesto Pasta

Pesto recipe from VegNews, with pumpkin seeds instead of pine nuts.

Ingredients

3cloves garlic,
1/4cup pepitas (pumpkin seeds),
1/2teaspoon salt,
2cups basil leaves, fresh and packed
1/4cup olive oil,
1/2package linguini,

Equipment

  • Food Processor
  • Large Pasta Pot

Directions

  1. In large pasta pot, boil water and cook the linguini for ~10 minutes. Drain in colander, retain a little pasta water, and replace pasta in pot.
  2. While pasta is cooking, combine garlic, pepitas, salt, basil leaves, and olive oil in food processor, and process into a smooth paste. Toss with pasta in pot, makes 4 servings. Enjoy with dolmas, hummus and pita.
