Chicken and Dumpling soup

A nice creamy soup for the chicken and dumpling craving.

Ingredients

3tbsp unsalted butter,
2 potatoes, diced
1 leek, diced
1/2tsp garlic, ground
1tsp rosemary, dried, ground
1/2tsp thyme, dried, ground
1tsp mushroom umami, dired, ground
salt and pepper,
3tbsp all purpose flour,
4c vegi stock,
1c sour cream,
16oz pasta (or gnocchi),
1bag quorn cubes,

Equipment

  • Pot for boiling pasta
  • Stirring spoon

Directions

  1. In large pot, melt butter. Add leeks, garlic, potatoes, rosemary, thyme and mushroom umami. Season with salt and pepper. Simmer for 5 minutes
  2. Sprinkle sauce with flour. Stir and cook for 2 minutes. Stir in stock and sour cream. Bring to boil over high heat.
  3. Stir in pasta, reduce heat to medium and cook pasta until tender (can add precooked pasta and not cook as long). Season to taste with salt and pepper.
