Tex-Mex Pasta Salad

Ingredients

1pound radiatore pasta, cooked
2tbsp olive oil,
1/2tsp garlic, dried
1package Ground meat crumbles,
2/3cup water,
1/2tsp cumin,
1/2tsp chili powder,
1cup Mexican blend cheese, shredded
1cup (grape or roma) tomatoes, diced
1/2cup bell pepper, diced
1/2cup black olives, sliced
1.5cup black beans, cooked
2tbsp lime juice,
1/2tsp salt,
4oz sour cream,

Equipment

  • Skillet
  • Pan (to cook pasta)
  • Small bowl

Directions

  1. Cook and drain the pasta.
  2. Cook meat grounds, olive oil, salt, cumin, chili powder, garlic, and water. Add bell pepper and cook. Set aside to cool.
  3. Combine sour cream and lime juice in a separate small bowl.
  4. Combine all ingredients together. Serve warm or cold.
