- score each of the cucumbers lengthwise along each side with a fork
- cut off the ends of the cucumbers and discard
- slice the cucumbers into thin disks (around 1/8th inch in thickness)
- place the cucumbers in a medium mixing bowl
- salt and pepper the cucumbers
- chop the green onions and add them to the cucumbers
- make a sugar/vinegar solution that is 2 parts sugar for every 1 part vinegar. Make sure that you only use apple cider vinegar for this recipe - not white vinegar.
- pour the sugar/vinegar solution into the bowl enough to cover the cucumbers
- chill overnight
- enjoy chilled right out of the fridge.
