Chicken with Olives with Mushrooms

I owe this wonderful recipe to my Dad. I don't remember the first time he created it, but everytime he made it- it was always a treat

Ingredients

1lb white button mushrooms, quartered
1can small olives, sliced
1tbsp rosemary, ground
2tbsp olive oil,
1/4cup leeks, diced
4 chicken breasts,

Equipment

  • sharp dicing knife
  • cutting board
  • stock pot

Directions

  1. Add the olive oil to the stock pot. Once hot, add the leeks and cook for 3-5 minutes.
  2. Add the chicken breasts and cook on medium heat until done (10-15 minutes based on size). If the chicken appears to be drying out, add 1/4 cup water. Flip chicken every 5 minutes.
  3. Sprinkle in the rosemary (to flavor). Add the mushrooms and olives. Cook until the mushrooms are done (7 minutes).
  4. Serving: one breast of chicken on a bed of (jasmine) rice topped with the cooked mushrooms and olive mixture. Enjoy!
