Cuban Yellow Rice

 2 Cups


Ingredients

2Cups Spanish (or other) short-grain rice,
2Tbsp Olive Oil,
1Tsp Paprika,
1Tsp Cumin,
1Pinch Saffron,
1Pinch Salt,
4Cups Water, Chicken Stock, or Shrimp Stock,
Fresh parsley, minced

Equipment

  • Large Saucepan

Directions

  1. Bring the water (or stock) and the saffron (if using) to a boil in the saucepan.
  2. Add remaining ingredients and reduce heat to low.
  3. Simmer for 20-25 minutes, or until all the liquid has been absorbed.
  4. Garnish with parsley.
