Directions
- Preheat oven to 350 degrees F
- Cream margarine and brown sugar.
- Beat in egg.
- Sift together flour, soda and salt.
- Combine bananas, soy milk and lemon juice.
- Add the dry ingredients into the butter mixture -- alternating with the bananas. Stir just enough to combine. DO NOT OVER-MIX!
- Turn out into an oiled and floured loaf pan.
- Bake 50-60 minutes or until done.
- Cool in pan for 10 minutes, then turn out onto cooling rack.
