Directions
- Heat oven to 475. Place potatoes in large bowl and cover with hot tap water. Soak for 10 minutes.
- Coat the baking sheet with 4 tablespoons oil and sprinkle evenly with 3/4 tsp of salt and 1/4 tsp pepper.
- Drain potatoes and spread on a triple layer of paper towels. Pat dry. Arrange potatoes in a single layer on the baking sheet bake and cover tightly with foil and bake for 5 minutes.
- Remove foil and continue to bake until bottoms of potatoes are spotty golden brown, 15 to 20 minutes. Rotate the baking sheet after 10 minutes.
- Loosen potatoes from pan with metal spatula and tongs. Flip each wedge. Continue baking until fries are golden and crisp for 5-15 minutes longer (rotating pan as needed if fries are browning unevenly).
- Season with additional salt and pepper to taste and serve.
