Chinese Vegetable Noodle Soup

This delicious light soup is amazingly filling.

Ingredients

5c chicken stock,
1tbsp sesame oil,
1tsp ground ginger,
1tbsp soy sauce,
1 carrot, peeled, thinly sliced on the bias
1/2c snow peas, sliced width-wise
1/4c small cauliflower pieces,
1/4c broccoli, chopped
1/2c mushrooms, sliced
6oz rice noodles, in 3 inch pieces

Equipment

  • Large Stock Pot

Directions

  1. Combine stock, sesame oil, ginger and soy sauce in the stock pot and bring to a boil.
  2. add the vegetables and noodles and simmer for about 10 minutes (until noodles are tender). Serve and enjoy!
