- Heat the Ghee on medium high heat in the saute pan. It will smell like movie popcorn and melt like oil. It's awesome.
- Saute the leek until soft.
- Add the garam masala, garlic, pepper and ginger. Saute for 2-3 minutes.
- Add the tomatoes, and saute for 5-10 minutes until the water mostly evaporates.
- Add the pulsed spinach from the food processor. Saute for 5 minutes until the juice is out.
- Remove from heat. Slowly add the yogurt an oz at a time. Then mix in the salt and paneer last. Cook for 10 minutes, and serve.
