Wonderful Thai chicken skewers.
- Cut chicken into 3/4" cubes, trimming of fat. Place in medium bowl.
- Mix all other ingredients with the chicken, stirring to coat. Cover and let marinate for 2 hours
- Thread 5-6 pieces on each skewer. Place griddle on stove-top, turning both burners on to medium-high heat.
- Cook skewers in batches, about 3-5 minutes on each side, until cooked thoroughly. Serve immediately, with soy sauce and peanut dipping sauce.
